I’m not going to lie, I’d hardly call myself a dab hand in the kitchen, so when I put this together I was pretty damn please!
I have an over abundance of carrots currently residing in my fridge, so out came this – mince with carrots, topped with carrot and sweet potato mash, with grated cheese on top. It was lush! Though I definitely think I’ll serve it with beans next time, bit on the stodgy side.. I’ll learn!
